Best Ever Chocolate Cookies

We had two days of cooler weather here in Texas and that always puts me in the mood to bake. My kids like to “help” and it makes the house smell so good too. We couldn’t resist these Best Ever Chocolate Cookies! They are soooo yummy. I’ll also give you an easy icing recipe that you can spread or pipe onto the top of these, but we left ours plain this time. The icing is great to use if you decide to decorate or “fancy-up” your cookies.

Best Ever Chocolate Cookies

Ingredients
  

  • 1/2 cup of butter softened
  • 1/4 teaspoon of salt
  • 3/4 cup of sugar
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of vanilla
  • 1 cup of flour
  • 1/3 cup of cocoa
  • 1 egg
  • Icing:
  • 3 egg whites
  • 1 teaspoon of vanilla
  • 4 cups of powdered sugar

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit and line a cookie sheet with parchment paper.
  • In a small bowl, mix cocoa, baking soda, flour and salt until well combined.
  • In a medium bowl, beat together butter, sugar, eggs and vanilla until fluffy.
  • Gradually add in your cocoa mixture and beat well.
  • Use a cookie scoop to scoop dough and place onto the parchment paper. Place about 2 inches apart.
  • Bake for 10-12 minutes.
  • If you are going to ice your cookies, allow them to cool completely.
  • To make the icing:
  • In a medium bowl, combine the egg whites and vanilla and beat until bubbly.
  • Add powdered sugar in gradually and mix until all of the sugar is incorporated.
  • Beat on high until mixture forms stiff, glossy peaks.
  • Transfer icing to a pastry bag and pipe onto cookies.
