Summer will be here before you know it! We are already enjoying much warmer days and beautiful weather outside. One thing that we love to do during spring and summer is have picnics and barbecues! This Pasta Salad with Balsamic Vinaigrette is the perfect side dish for those fun days outside. You can put this together pretty quickly and even ahead of time. This recipe will show you how to make your own dressing as well. It goes great with this pasta salad or any other salad you make.

Pasta Salad with Balsamic Vinaigrette

Ingredients
  

  • Salad:
  • 1 lb Tricolor Pasta
  • 1/2 Green Bell Pepper diced
  • 1/2 Red Bell Pepper diced
  • 1/2 cup diced Red Onion
  • 2/3 cup diced Tomatoes
  • 1/2 cup Black Olives
  • 8 oz Cheddar Cheese cubed
  • 1/4 cup Grated Parmesan
  • Dressing:
  • 1 1/2 tsp Minced Garlic
  • 1/3 cup Balsamic vinegar
  • 1/3 cup Olive Oil
  • 1/2 tsp Basil
  • 1/2 tsp Oregano
  • 1/8 tsp Honey
  • Salt & Pepper to taste

Instructions
 

  • Boil the pasta, drain and allow to cool.
  • Combine all of the ingredients for dressing and whisk until well blended. Then set to the side.
  • In a large bowl combine all of the salad ingredients.
  • Pour the dressing on top of the salad and toss to coat evenly.

This Pasta Salad with Balsamic Vinaigrette is great to make ahead and take to any gathering. After it’s all put together, just store it in the fridge until you’re ready to go.
