Slow Cooker Potato Soup

  • 8 medium potatoes, peeled, washed and cubed. You could probably leave the skin on if you prefer.
  • 1 onion, finely chopped
  • 1 quart of chicken broth
  • 1 lb of bacon
  • 1 cup of shredded cheese
  • 1 cup of half and half
  • ¼ cup of butter
  • 1 tbsp of garlic powder
  • 1 tsp of pepper
  • 2 teaspoons of salt
  1. Chop the bacon into 1" pieces and fry on the stove. Drain on paper towels and set a little of the bacon to the side to use as a garnish.
  2. Add all items into the slow cooker and stir.
  3. Cook on low for 8 hours.
  4. Serve warm and top with some shredded cheese, bacon crumbles, green onions and sour cream (optional).
