Homemade Pumpkin Belgian Waffles

Ingredients
  

  • 3/4 cup of brown sugar
  • 3 tablespoons of cornstarch
  • 1 1/4 cups of flour
  • 1 1/2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 3 teaspoon of cinnamon
  • 1/2 teaspoon of ginger
  • 1/4 teaspoon of cloves
  • 1/4 teaspoon of nutmeg
  • 2 eggs
  • 1 cup of milk
  • 1 1/2 cups of pumpkin puree
  • 4 tablespoons of butter melted

Instructions
 

  • In a large bowl, add all dry ingredients and whisk to mix well.
  • Separate the eggs, leaving the egg whites in a separate bowl. Set them to the side.
  • Add yolks of eggs, pumpkin puree, milk and butter to a large bowl and mix to blend.
  • Add pumpkin mixture to the dry ingredients and mix until just combined.
  • Whip egg whites until stiff peaks form then fold egg whites into the batter.
  • Pour batter into heated and oiled waffle maker and bake following directions.
  • Served with pecans and maple syrup.
