Yummy Bacon Egg Muffins
I was honestly dreading the first day back to school. This means I can no longer be lazy and get up when I want. It’s the time for routines, breakfast meals early in the morning and lunch options. This means work. I absolutely love the life I have during the summer months. I mean sure, we plan stuff but we don’t wake up at the crack of dawn to do it though. It’s kinda depressing but on the other hand it’s kind of exciting too because I get the whole house to myself. It’s just me and the dog.
As I was preparing for the first week of school during a Walmart shopping trip. I walked past the meats section and the Butterball Turkey Bacon caught my eye. I love turkey bacon and I love Butterball! My first thought was, there is no way I am waking up even earlier to make eggs and bacon during the first week. I need time to readjust to my new schedule. But, I don’t want to just give my kids cereal or some other sugar loaded breakfast.
This is where I thought about a recipe that I have that can be prepared ahead of time and enjoyed all week. I used to make these all the time. This is perfect for a yummy breakfast idea that the kids will love. My kids love bacon! I mean LOVE! I hardly ever buy the real bacon though, it’s almost always the Butterball lower sodium turkey bacon. If you have yet to try it, you really should. It’s that good. I care more about taste than anything but I should tell you that it’s 65% less fat than pork bacon and it only has 25 calories per slice. We don’t talk that way around here though because if I did, my kids probably wouldn’t even try it. It’s lean baby! Shhh! Please don’t tell my children.
I decide to make my yummy bacon egg muffins because I can make them on Sunday night and pop them in the microwave the next morning. I make enough for the whole week. All you need is three simple ingredients for this recipe too.
- 1 package of Butterball Turkey Bacon
- 12 eggs
- 3 medium Roma tomatoes
Yummy Bacon Egg Muffins recipe instructions:
Whip all 12 eggs in a bowl until the are mixed up completely. Dice up all the Roma tomatoes and add them to the egg mixture.
Spray the muffin tin with non stick cooking spray.
Lay one full piece of Butterball Turkey Bacon around the edge of each muffin space. Cut the remaining bacon slices in half and place the half in the bottom of the muffin tin. This is not required to hold the muffin together. I just really like the bacon enough to load it up. You can skip this bottom part if you only want one slice of bacon per muffin.
Lastly, pour the egg and tomato mixture to fill each muffin space. Back at 350 degrees for about 20 minutes or until the egg mixture has completely cooked inside.
Optional: This is a base recipe but you can change this recipe up in so many different ways by adding even more ingredients if you want. If you do add extra ingredients be sure to lower the egg count.
Fresh minced garlic
This recipe makes 12 muffins. You can wrap them in a plastic baggie and save them in the refrigerator to have them all week. They will last all week too. This is exactly what I do.
