Crock Pot Stuffed Pepper Soup

As you may have read a couple of days ago, both of my children are playing baseball this year. So needless to say, we have practice almost every day of the week and games on the weekends. I love watching my kids play, but it can make for a hectic dinner time. My crock pot will be the only way we’ll make it through! Just a while ago, we shared our Slow Cooker Stuffed Peppers recipe with you. We’ve re-done this recipe into a soup, kept the crock pot part and made Crock Pot Stuffed Pepper Soup! Peppers are not at the top of my list, just because I don’t actually like to eat the pepper. I really only made them for my husband because he loves them. But making it in a soup makes it a whole new game. I LOVE the flavor the peppers give off, so this was the perfect compromise. And the kids really liked it to!

Crock Pot Stuffed Pepper Soup

Ingredients
  

  • 2 lbs of ground beef
  • 1 onion chopped
  • 1 tsp of minced garlic
  • 2 quarts of water
  • 28 oz of tomato sauce
  • 28 oz of diced tomatoes
  • 1 cup of uncooked rice
  • 2 cups of chopped peppers
  • 1/4 cup of brown sugar
  • 2 tsp of salt
  • 1 tbsp of beef base
  • 2 tsp of black pepper

Instructions
 

  • In a skillet, brown the ground beef and drain.
  • Add the ground beef to the slow cooker, with all of other ingredients and cook on low for 8-10 hours.

Voila! This Crock Pot Stuffed Pepper Soup is what I call a throw and go recipe! The next time I make it, I will be chopping the peppers and onion up really small so that they almost disintegrate when they cook. That is totally my preference and I do it even when I use something like Rotel.

I know I’ve mentioned this cookbook before, but it is absolutely my favorite when I’m doing crock pot cooking! It has 1400 recipes in it and that’s hard to beat!
